San Diego Hot Pot

It's only about once a year or every other year that I get to see my Nai-Nai and Yeh-Yeh and like I said before, it's always an amazing time. I finally downloaded more pictures from my trip out this Christmas break.

We took a nice trip out to La Jolla one day. It's a usual spot that we visit when out in San Diego as it is for most people. Kids love to get to see the seals, climb through the little caves and on the rocks, play on the beach, and then for the adults there is the same along with the shops in town and restaurants.

Hot pot is pretty much one of the best events that come from a trip to my grandparents. If you have never heard of hot pot before then you should know it is a wonderful thing. Hot pot is sometimes described as Chinese fondue. It's a wonderful meal and social event.

In preparation, my Nai-Nai and mom sliced up fish, shrimp, beef and lamb very thing and placed them on plates. I'm pretty much just going to let to pictures talk from here with just little explanations so hot pot newbies understand what's going on.

You use these pots of boiling water on the table to cook your food as you go. The cabbage and tofu are in there from the start and eventually the bean thread gets thrown in too.

The food gets dipped in a sauce mixture which for us we start with a base and then other things can be added to it to make it most spicy or whatever you like.

Back at State

Day three back on campus for my second to last semester as a Penn State student... and for most of my friends it's their last semester on campus. :-(

The biggest adventure so far.... (because we know State College is always poppin')... driving stick shift around downtown and making a scene. This is the first semester I've had my own car up here and of course it had to be the manual car that I can barely drive.

Last night, Alex and I took a trip to Wegmans. It was probably one of the most amazing things I've ever seen. The only downside was that a lot of the stuff I wanted would have collectively cost me my entire months food allowance and wouldn't have lasted me as long. By the way, in the international section they have bean threads... from China AND Taiwan.

We did end up buying some amazing stuff though. Alex and I are on this new health kick. (Surprise surprise, it's a new year!) We have filled our apartment and refrigerator with fruit, milk, cereal, granola, whole grains, yogurts, etc. We couldn't afford cheese sadly. Our biggest issue we found though was dinner. What do you buy for dinner when trying to cut down on unnecessary carbs? We bought whole grain pasta but we can't really eat that every night... or can we?

We'll see how this goes. Today we are also going to the gym and it's going to be a weekly thing. We will go to the gym together every Monday, Wednesday, and I don't know... Friday? Sunday? We'll see about that one.

I hope that everyone's year/semester is starting out fabulous! I'm planning on holding on to this as long as I can (since I already shoved myself down that whole graduating early path).

San Diego Sunny Time

Visiting my grandparents (dad's parents) in San Diego, CA is probably my favorite thing to do. Ever. I seldom get to see my dad's side of the family so when I finally do, it is quite the treat.

Trips to San Diego are always filled with good food, good weather, good laughs, and great company.

This trip there was an extra lot of all of the above. Let's begin with good laughs.

There is a language barrier as well as probably a slightly cultural barrier between my grandparents and I, and even maybe slightly with my father from time-to-time although mostly rare. They are immigrants from China/Taiwan and I was raised near my American side of the family so the Chinese cultural influences are absent for the most part, not completely but enough to feel like an outsider if ever in China, even Chinatown. My father, my Yeh-Yeh (dad's father) and I needed to take a trip to the Asian grocery store to pick up some extra food for hot pot that we were having for dinner (so extra friends got invited semi-last minute). After gathering the beef and lamb, we went searching for the rice bean thread (noodles). My Nai-Nai (dad's mom) gave my Yeh-Yeh very specific orders though, which my father and I did not understand in the least at the time and found ourselves practically hysterical laughing in the aisle staring at these bean threads.

My Nai-Nai requested this brand of bean threads.

But they had to be from Taiwan.

Not this brand.

But from Taiwan.

You can see our predicament...

Later we found out that the brand my Nai-Nai wanted is a known brand and that's why she wanted it (not actually that important) but these noodles that are made in China have "questionable ingredients". It had to do with something about bleach being used in the making of them. My dad and I were completely ignorant to this and just found it to be hilarious and silly. But for all of you reading this now... if you ever want to buy rice bean threads for whatever reason, avoid any made in China. Oh and also avoid drinking the bubbles in bubble tea (as tasty as they are)... something about a chemical used to make plastics also found in bubbles.

Minut Mart Mini Pies

It is literally the only place to get food within a less than 5 minute walking radius so Alex and I decided we're lazy and it'd have to do for dinner tonight. While there we found mini pies... Having a small child in the family is making Christmas exciting again. We finally get to buy toys again and tell stories about Santa.

I've been thinking about gifts for the niece and as much as I want to dress her up head to toe in Penn State gear I must resist. I need to get her something she actually would like and uhm... care about.

My only worry about giving her these Yo Gabba Gabba dolls is that she expects them to come to life or have DJ Lance appear. Not that I wouldn't dress up in the awesome orange bodysuit for my niece that I love so dearly but I don't think I can be there everytime she wants the real life DJ Lance. (Oh and she might get confused when DJ Lance turns into a short, asian girl...?)

Moving Forward for Everyone

This has been an extremely stressful two weeks. I (along with the rest of the Penn State community) am completely saddened and disgusted by the actions of former assistant football coach of Penn State, Jerry Sandusky. I (along with the rest of the Penn State community) also feel saddened and betrayed by the actions of some of members of the Penn State Administration.

This will be my only post on the subject. It's time to focus on moving forward from this and help the victims in what ways we can.

What are you or what were you for Halloween/Halloween weekend? Me, I was a quite fashionable nerd if I can say so myself. My Halloween weekend will filled with lovely people, good eats, and joyous celebration. Oh... and hives. Yes everyone, a kind friend was just trying to help out my costume with those fabulous black striped tube socks. Little did I know when this picture beneath was taken that 20 minutes later the backs of my knees would be swollen, red, burning, and bumpy. Gain laundry detergent it's been nearly 15 years but you finally striked again! I quickly (after a meltdown) gobbled up come antihistamines, rubbed some hydrocortisone cream on my legs and took off with my tourist friend, Mia Wallace, Flapper babe, Black mail, and Kitty Cat to a night out. Tonight I will find myself surrounded by some lovely, interesting people all joining and yelling, "Show us your mother Riff!" for my first ever big screen showing of Rocky Horror Picture Show. I hope everyone's Halloween weekend and night are as fun as mine was and is sure to be!

OH! and this is my lovely friend Chelsey. Remember that delicious cookie recipe I posted from Daily Candy? Chelsey actually made the cookies and brought them with her to surprise me. This girl is amazing and the cookies were phenomenal!!!

I don't know if you guys subscribe to emails from Daily Candy but this was one of the more recent emails I got from them. This recipe just sounds amazing and if I had any money I'd be making these cookies like... NOW! If any of you do give it a try feel free to let me know and share and pictures!! (cough cough CHELSEY!)

Cornflake Chocolate Chip Marshmallow Cookies
Makes fifteen to twenty
Ingredients
16 tbsp. (2 sticks) room-temperature butter
1¼ c. granulated sugar
2/3 c. light brown sugar, tightly packed
1 egg
½ tsp. vanilla extract
1½ c. flour
½ tsp. baking powder
½ tsp. baking soda
1½ tsp. kosher salt
3 c. Cornflake Crunch
2/3 c. mini chocolate chips
1¼ c. mini marshmallows

1. In the bowl of a stand mixer fitted with the paddle attachment, combine butter and sugars; cream together on medium-high 2-3 minutes. With a spatula, scrape down sides of bowl, then add egg and vanilla and beat 7-8 minutes.

2. Reduce speed to low; add flour, baking powder and soda, and salt. Mix just until dough comes together, no longer than 1 minute. (Do not walk away from the machine during this step or risk overmixing.) Scrape down sides of bowl.

3. Still on low speed, paddle in cornflakes and chips until just incorporated, about 30-45 seconds. Paddle in marshmallows.

4. Line a sheet pan with parchment paper. Using a 2-oz. ice cream scoop, portion 1/3 c. dough at a time onto pan. Pat tops of dough domes flat. Wrap pan tightly in plastic wrap and refrigerate for at least 1 hour or up to 1 week. (Do not bake room-temperature disks — they will not hold their shape.)

5. Heat oven to 375°. On a parchment- or Silpat-lined sheet pan, arrange chilled disks a minimum of 4 inches apart. Bake 18 minutes, until cookies are browned on edges and just beginning to brown toward the center. Cookies will puff, crackle, and spread. Leave them in oven for another minute or so if they still seem pale and doughy on the surface.

6. Cool cookies completely on pan before moving them to a plate or an airtight container for storage. At room temperature, cookies will keep fresh for 5 days; in the freezer, they will keep for 1 month.

Snuggled by G. Love

Last minute yesterday afternoon, Alex (the roommate) and I decided to go to the G. Love concert being held downtown. Luck for us, there were still tickets left. I am always appalled at how many people don't know about G. Love and the Special Sauce.

Opening for G. Love was The Apache Relay, a band I had never heard before. I was pleasantly surprised when their music ended up being fun and brilliant. They were rockin' out and just putting on an amazing show. Their music was very eclectic. One song would have a little Arcade Fire sound going on, then the next would be a little more folk-y, then the next would have a little old school funk going on, even a little from the vocals that I found to resemble some Al green slightly. The band seemed very cool, chill... even invited everyone in the audience to meet up with them after the show at their merch table in the lobby. They stood there for a while just chattin' away with all the fans. I was very impressed.

Alex, G. Love, and me

G. Love, of course, put on an amazing show... like always. I have seen G. Love in concert before in Philadelphia and then in Tennessee at Bonnaroo twice (the the main stage and right after on the small, Sonic Stage for an acoustic set).

Alex and I walked into the theater lobby and saw signs on the merch table that said "First 50 to buy something gets to meet G. Love". We thought it was a joke, but we asked the merch guy and he said it was real and there were still spots left. Just going to say... I freaked out a bit. We both bought his new CD and then waited after the show to meet him. I am slightly disappointed and embarrassed by the fact that I basically froze and didn't say anything but "me too" following Alex's request for a picture. I was so excited after the picture that I almost walked away without asking him to autograph my CD. I now know how I react when meeting a celebrity... I can not keep my cool. (While walking away I very faintly squealed... possibly not as faint as I actually thought I was though.)

Now if you're wondering why the title of this post is "Snuggled by G. Love" I will tell you. If you look in the picture above you can see G. Love has his arms around us. He was really cool and adorable and when we went to pose for the picture he pulled us in all close and said "Come on. I'm going to snuggle you guys real close. Let's snuggle." I can now and forever say, "I totally snuggled with G. Love!"

Like I said last night to Alex... We met G. Love. It happened. It could never un-happen!

I would like to start by telling you how much I love your original Dr. Pepper soda. My taste buds are extremely keen on the flavor and find it to be a typical choice when drinking soda. Now that I've said that, I'd like to follow by telling you how annoying and ridiculous your new marketing campaign is for Dr. Pepper 10. It seems you were attempting to capture men who don't like to be associated with typical diet drinks, but you managed to alienate every single person that does not fall into that category. As a woman, I'm thoroughly annoyed and as a consumer I can say that for now as this campaign continues I most likely will not be buying any of your products. I think your campaign is a huge mistake since you are seriously limiting your potential customers and pissing over a lot of your current customers.

I am so happy to have found these people... this wonderful project. I have been collecting what I thought was obsolete photography equipment for the past, I don't know, 7 years. I could probably say even longer considering I own a Mio Polaroid camera and one of those tiny Polaroid snapshot cameras which I acquired as a child somewhere around 2002-2005. I currently own 6 film cameras, 2 of which are instant film cameras, just in hopes that someday I'll be able to afford the quickly disappearing film that they require. This Impossible Project is so exciting for me to finally hear about. I'm not sure if I'm late to the party but nevertheless I am overjoyed.

Here is a tidbit about them that can be found on their website...

I'm back.

I don't know how often I will be posting now that I have returned but I will try my hardest.

To start, I would like to say that I watched the Google+ hangout of the Dalai Lama and Desmond Tutu and I find it to be incredibly wonderful that the advances of technology of 2011 have been used so wonderfully as to connect these two amazing men. I love that I was born at a time when I can still be amazed by the technological advances like these. I feel like my future children are going to be so used to technology by the time they're born and grown that something like video chatting will be so commonplace to them and they won't see the same beauty in it that I do. Plus... by that time the Dalai Lama and Desmond Tutu will just be names in the history books... of etexts I should say.

Finger-Licking Great Andrea Reusing's Fried Chicken

Life’s no picnic — until you add fried chicken. Whip up a batch according to Chapel Hill, North Carolina-based chef Andrea Reusing’s recipe, which she’s shared with us from her new book, Cooking in the Moment.
Fried Chicken
Serves four

Ingredients
1 3½-4 lb. chicken, rinsed, dried, trimmed, and cut into ten pieces
2 c. buttermilk
2 tbsp. kosher salt
2 c. all-purpose flour
1¼ tsp. freshly ground black pepper
Lard or expeller-pressed vegetable oil for frying

1. Put the chicken, buttermilk, and 1 tbsp. salt into a large bowl. Stir well and refrigerate overnight.
2. In a colander, drain chicken and let it come to room temperature.
3. In a large bowl, mix together flour, remaining salt, and pepper.
4. Fill two large cast-iron skillets (or other deep, heavy saute pans) with lard (or oil) about 1 inch deep. Heat over medium high to 325°.
5. Starting with the dark meat, lightly coat one piece of chicken at a time in flour mixture, brushing off excess flour. (Avoid pressing the flour into the chicken.) Gently lay floured chicken in oil. Don’t move it at all for the first few minutes, so it doesn’t stick.
6. Repeat with the remaining dark meat, then move on to the white, ideally cooking the two in separate pans. Once a pan is about three-quarters full, reduce heat to low and partially cover.
7. Watch chicken closely, turning the pieces with tongs as needed for even cooking and rotating the pan itself on the burner. As the first side turns deep golden brown (8-10 minutes), turn the pieces over and continue to cook until the they are evenly crispy (another 8-10 minutes). The dark meat will take a little longer than the white.
8. Transfer the chicken to a clean brown paper bag to drain. Serve warm or at room temperature.

Sorry for the delay in Bonnaroo posts. I have many more pictures and some videos I really want to share with you. The posts have been delayed due to some sudden moving shenanigans and for that I am deeply sorry.

I am happy to announce though that I am back for a third summer living in Stegaluniverse with my wonderful sister and brother-in-law. I'm sure that just like last summer it will make for some interesting posts and discussions.

Now you must prepare yourself for the up-coming food posts that always unfold when living in this household. If I could eat like this forever... oh man.

Anyway. It's a little late now but I will be posting the Bonnaroo stuff THIS weekend. I am also thinking about doing some handy work on my falling apart urbanoutfitters shoes and creating a post around that. So if that sounds of any interest to you... stick around.

Thank god for Robert Plant.

Alex and I happened to run into a great group of guys. It was some very nice company for the Robert Plant show. And I have to say... they were the most interesting and fun people we met down at Bonnaroo. Within this great group of guys were three brothers that we learned were in a band together called Barry, also their last name.

Alex and I were given their demo and made them a promise we'd take a listen. It just so happened that on the car ride home we put it on and ended up listening to it on repeat for a good portion of the trip. They really were some great tracks and we just couldn't help ourselves.

I was told that the band began in January 2011 as the two older brothers former bands were falling apart and the youngest brother wanted to make the band part of his project in school. It was most definitely a brilliant idea.

As for their genre, "Folk Rock n' Roll" as state on their facebook. The demo began with a fun childhood memory, a morning wake up song that their father sang to them as children. It continues on with a track towards the middle called "Drink One More" that features each brother's voice and story, which you'll have to take a listen to know what I'm talking about. I don't want to say much more and spoil the fun of your first listen.

The long haired brothers with their smooth voices and creative tunes were a refreshing new find to my music collection. I highly encourage a gander at these guys. And if you are from NYC or plan to travel there... they play at Kenny's Castaways July 21st, so check it out and send them some love.

To begin the trip... we traveled about 45 minutes into our 13.5 hour drive when the car broke down.

and started back up again...

and broke down again...

So we chilled in a field on the side of the highway until this girls father rented and brought us a 2011 Expedition. Paul O'Plenty is the savior.

We drove (Alex and I) for the full trip, which ended up being 19 hours with the break down, and these boys did not change this position once.

After we arrived we immediately set up camp and went exploring. My darling brothers brought back this HUGE $15 watermelon. A perfect food to help us adjust to the hot Tennessee temp.

Finally making it to Centeroo... the large hoards of friendly people were probably my favorite part. It was all partying, relaxing, celebrating, and enjoying the best 4 days of our lives.

The level of friendliness of everyone at Bonnaroo was insane. I want to live there full time just because people were so amazing there.

And when it was time to cool off or wash your hair (without paying $7)... there was the fountain- the dirty, dirty fountain of recycling water.

But it was worth it.

Them Tents

Still prepping for Bonnaroo and today we were in full swing. My father and I took out all the tents and set them up to air them out and what not. We took out the stove and propane tanks and checked everything out. We gathered the chairs and tarps. I couldn't be more ready for this trip. The only thing I'm not ready for... the 13.5 hour drive to Tennessee. Good thing my roomie and I have long distance driving experience with 5+ hour traffic traveling from school and home to Philadelphia. We'll see how 13.5 hours works out...

Bonnaroo Prep

Today was quite the productive day. It began with 4 large glasses of water and an iced tea. This was done to ensure my upcoming afternoon drug test for my new job went successfully. (It did.)

I proceeded to pick up the Swede brother of mine from his second to last day in American high school after which we went SHOPPING!

Like I said... very productive.

We got bandannas, a flag pole, food, water, sunblock, dry shampoo, batteries and other essentials for our quickly approaching, 13.5 hour, adventure to Tennessee.

Now all we have to do is get the tents prepared, gather sleeping bags, the outdoor grill, chairs, blankets, towels, ... make sure our friend has her green card up to date so she is free to roam around the country... and we're good.

I couldn't be more prepared and excited for Bonnaroo!

I'm back to blogging. We'll see how this goes for now. I just ran out of things to say before but now I'm back and have a ming full of ideas and opinions and since its summer I will hopefully have more time to do fun things and write about exciting adventures and what not.

My first topic of being back... Brides Maids.

Kristen Wiig is hilarious. Melissa McCarthy is hilarious. Maya Rudolph is hilarious. The combination killed it (in a good way) on screen. I laughed so hard I cried and pretty sure I was so loud I became the asshole who laughed over everyone else in the theater. But I just couldn't help myself.

The combination of those three in this movie was perfect. Their funny antics with realistic, simple conversation was used in a way to create ultimate hilarity. Pretty much, they were goof balls.

Tom Charity from CNN.com pretty much says it all:

"Bridesmaids is a stiletto-sharp, raunchy, no-holds-barred yuk-fest that stands as a worthy female counterpart to the likes of Wedding Crashers and The Hangover."

Now for men, I know that there was a bit more romance and seriousness thrown in there for it to be just as hilarious for them, but for me and other ladies I've talked to it was finally a romantic COMEDY that was worth seeing and actually leaned more to the comedy side than the romance side. We, women, like to laugh too. And we want to see the hilarious female comedians taking the front and center. This movie did it for me. It completely met my expectations and then some. I might have a criticism here or there but they won't stop me from watching this movie and repeating its lines for the next 50 years.

Just go see it if you haven't already!

Mazda's and Their Spiders

This yellow sac spider had decided that a great place for it's home is inside the fuel system of the 2009/2010 Mazda 6.... interesting.

"A certain type of spider may weave a web in the evaporative canister vent line and this may cause a restriction of the line," Mazda said in a letter to the National Highway Traffic Safety Administration.

The yellow sac spider's new home location puts the Mazda6 at risk for negative increase pressure in the fuel tank and possible fires.

I think this is yet another sign of the world coming to an end for sure... spiders are turning against us!

We all have bad habits. Tanning should not be one of them.

This is our skin we are talking about... the thing that protects all our vital organs and covers our entire body.

We always have to take care of our bodies and although some of us struggle with this sometimes, whether it's cheating on good nutrition or skipping a week of exercise, our skin is something that shouldn't be too difficult to keep up with.

Many men and women use moisturizer every day... pick the moisturizer with spf 15.

Many of us like to be tan... I like to be tan... but I like not having melanoma better.

Tanning needs to be avoided at all costs. Just like cigarettes, the use of tanning beds and the UVA rays can be a DIRECT causation for cancers. By using things like these you are going out of your way and even paying to open yourself up for the high risk of cancer.

Let's be smart people. You don't look good sucking smoke into your lungs or sounding like you've had your vocal cords snipped and you also don't look good with leathery unnaturally tanned skin with wrinkles, especially before your time.

State Patty's Day Analysis

Hello all.

I know that I have been lagging a bit lately and I apologize for that. I have had a busy month... especially this last week. Here is the update from this State Patty's 2011.

Taken from the Centre Daily Times:

Police reported responding to 110 calls in the 24-period through Saturday morning, making for at least 299 during this State Patty's Day weekend, the student-created event begun in 2007. Police responded to a total 365 calls during the entire weekend in 2010.

Lt. Bradley Smail said this afternoon that Chief Tom King still was calculating totals and finishing assessments of the weekend.

"It was extremely busy Saturday and into Saturday night as well," Smail said. While Smail said he wouldn't call this the worst State Patty's, he said it "probably" was the busiest.

*Keep in mind how many student's go to Penn State and add all the students that come up from schools like Drexel, University of Delaware, Maryland, Pittsburgh, JMU, Temple, etc. And thats barely the beginning.

I must say that I thought State Patty's was awesome this year. Of course, just like every weekend there are going to be those kids that are assholes and over do it and such. But from the looks of my day and the parties I went to (because I did participate fully in State Patty's Day)... everyone was having a good time and were not being too big of idiots.

All-in-all, State Patty's 2011 was a success in my book.

I know it sucks for the town and the residents.... but I had an awesome time.

The Library

I went to the library for the first time yesterday. I picked a desk, sat down and studied. It felt completely odd and quiet and every weirder.... I could focus. So then today I decided to go again. I have a paper to finish and another midterm to study for so I did it. I went to the library AGAIN.

I'm flabbergasted by this experience... that I can sit down and get all my work done and all with ample time until Pretty Little Liars comes on. How'd a thunk it?

Ok ok... I knew this would happen but the library was always so intimidating. It's so large and maze like.

People get stabbed at libraries, I hear. (OK.. that happened once...)

Anyway, as proclaimed by my roommate, "ahhhh (I'm) officially a college student now"

Libraries. They are a wondrous thing... go to your local library... take your kids. It feels as good as belonging to a gym (and going!).

Now to finish out this insane week of one paper and four exams all on consecutive days... and start the weekend with long awaited visits from my brother and two of my friends.

Hello State Patty's Weekend. I'm sorry State College that you hate it so much.

Maybe if lame non-Penn State kids would stop destroying our town and acting like complete a%$holes or maybe even just stop coming to begin with then you would be able to embrace the greatness of the holiday instead of having to put the town on lock down.

I vote Penn State students take back OUR State Patty's Day because this is ridiculous. I've also been told there is a FB site out there for State Patty's Day shirts specifically for UDel students that plan to attend. SO WRONG!

Stopped by Thon today with some friends making it my first visit ever to the big event. It was quite exciting. So many people, so many colors, so much good energy... everybody was standing in support of the dancers and cheering and reminding each other FOR THE KIDS.

If you haven't heard of Thon I would probably go take a look. It is the largest student-run philanthropy in the world. Yes. THE WORLD... benefitting childhood cancer.

I feel like at least once before I graduate from this wonderful institution of Penn State I must participate in Thon... even though sometimes the other students can get a bit frightening with there level of excitement and involvement in it.

If anyone knows me personally, they are well aware that I have a thing with blood and what I like to call my "soft spots". These soft spots are the backs of my legs and same for the elbows.

In other words, I am not necessarily sad that I am not yet eligible to give blood and I am thankful for not ever having to (before now) go to the hospital having to get an IV.

The time had to come eventually and the blood and the IV came in the same night. YAY.

That yummy stomach virus I had decided to turn on me. But I have proof... I did it!

I didn't pass out. I did cry a little. But I got the IV... got the blood drawn... and took a picture for proof.

Took it like a champ. Sorry if this is gross but I am just very proud of myself.

Valentine's Day Post 2

Valentine's Day doesn't not need to be just for couples in relationships. We all have relationships with different people, friends and family and even ourselves. Don't get down about what this commercial holiday is supposed to signify, use this day to remind yourself of what you love about yourself. Think about all the good things in your life and all your accomplishments, big and small. Treat yourself to something nice, take a day for you. Or find a friend that may also be spending this day solo and spend it together, reminisce on your friendship. Go do something fun! Be proud of your independence.

I've said this to some of my friends and they just think I'm crazy and making things seem even more depressing but you have to good at the broad picture. This is February 14th. Another day taken over by the media and made into something bigger then it needs to be. And when in a relationship, some find it fin to partake and show their love off, but why does that mean everyone else has to be miserable. I still had lots of love in me before I had a boyfriend and I didn't sit around moping every Valentine's Day sad that I had no one to spend it with.

If you have a group of friends that are solo, get them together and have dinner or a party. You have one friend, two... do the same. If you are by yourself, think of something you love to do and just do it. I spent many a Valentine's Days watching old classics and eating thai/chinese/indian/italian food. If you like the spa... go to the spa. If you like getting your nails done... go get your nails done. If you enjoy playing video games... go play those video games. Have any family like cousins? Go spend time with them.

Just remember this can just be another day if you want it to. You spent the day working... go home.. eat dinner... your normal routine.. and go to bed.

This might still be coming off lame but for me, as long as I remembered it was JUST Valentine's Day, and I had love no matter if it was with a boyfriend, or husband or whatever... I had a good time regardless.

Now STOP being a sourpuss and be happy. Just because you may not have a significant other doesn't mean there's not love in your life. Just remember that.

Oh! and it's not pathetic to buy yourself your own chocolates. They're tasty! Get empowered. You can do shit for yourself now and then, you know!

Valentine's Day Post 1

So, minus the butterfly thing at the top this necklace is almost identical to the first piece of jewelry my boyfriend ever gave me. Actually I think its almost the only piece of jewelry besides one other necklace, but that's not the point.

I used to wear this necklace everyday and then last summer I took it off to shower and my sister's cat stole it and probably dropped it in the toilet where I most likely ended up flushing it.

I miss this necklace. I was thinking of rebuying another one for myself but I can not longer find one I like or one that looks identical to the original one.

I'm sharing this because I love jade jewelry. I have a jade bracelet "permanently" around my wrist and loved having the necklace.

I just wanted to remind you boyfriends out there that there are many styles of jewelry. If you're on a budget and still want to get something pretty, there is more than just diamonds.

Especially as I posted before, I know a lot of girls that would love the GoodwoodNYC lip or diamond earings and maybe even some that would like the heart necklaces.

Just remember... sometimes it's the little things that the girl/boy will appreciate more. It doesn't always (or ever) have to be some spectacle, just a little something so show that you listen and that you care.

I am waiting anxiously for a package to arrive from my parents. Once it does, I will have my camera back, some vitamins, and a card reader for uploading the photos from my borrowed camera from my dad. It's going to be a very busy time, lots of meetings and homework. Chinese New Year 2011

Today is the first day of the Chinese New Year!

If you want to see a good time head to your nearest Chinatown!

And just in case you were wondering, it is the year of the rabbit.

Married folk go hand out some red envelopes with money in them to your younger family members.

Pay a visit to the elders in your family.

Set off some fireworks or firecrackers... or maybe just some little poppers for the youngsters.

Go watch a cool dragon dance!

Avoid meat... I think.

Eat some mooncake?... Actually that's the wrong holiday.

Well, I don't really know all too much about the Chinese traditions but I know those few... so have a good time. Be good. Visit your family and friends. Eat food. Happy New Year! :-)

Just woke up....

I decided to grab one of these Eating Right "100 Calories Cranberry & Citrus Chewy Bar with Yogurt Coating.

HUGE fail.

Probably one of the most disgusting chewy, breakfast bar things I have ever eaten.

Do yourself a favor and just grab the normal Chewy brand bars... OR even better, the Special K with strawberry ones.

Got this lovely message in my school mailbox today from my Positive Psychology and Wellbeing professor. I find it refreshing and nice to receive these emails... makes it seem like he actually sees us students as real people and cares about our wellness unlike other professors.

The latest Dietary Guidelines for Americans, from the U.S. Department of Agriculture and the Department of Health and Human Services, are designed to help people reach a healthy weight and reduce their risk of diseases such as heart disease, stroke, diabetes and cancer.

NEW SERVINGS: 8 ounces of fish in your diet

About two-thirds of adults and one-third of children in the USA are overweight or obese.

"We are saying to Americans: You really need to think about your diet because you want to live a good, healthy life and you want your children and grandchildren to have that same opportunity," Agriculture Secretary Tom Vilsack told USA TODAY. "You need to be conscious of what you eat."

Among the 23 key recommendations:

•Consume fewer calories from solid fats and added sugars.

•Eat more fruits and vegetables.

•Choose a variety of vegetables, especially dark-green, red & orange vegetables, beans and peas.

•Consume at least half of all grains as whole grains. Increase whole-grain intake by replacing refined grains with whole grains.

•Increase the amounts of fat-free or low-fat milk and milk products, such as milk, yogurt, cheese and fortified soy beverages.

•Use oils to replace solid fats where possible.

•Reduce daily sodium intake to less than 2,300 milligrams for many people and further reduce intake to 1,500 milligrams for people who are 51 and older and those of any age who are African American or have hypertension, diabetes or chronic kidney disease.

Currently, people consume about 3,400 milligrams of sodium a day or about 1½ teaspoons.

Does this sound like your diet?

The guidelines for healthful eating are not new ideas — nutritionists and public health officials have been preaching similar ones for years — but these habits are a far cry from the way most people eat.

On average, adults consume:

• Nearly 800 calories a day from solid fats and added sugars, the guidelines say. That includes several hundred calories a day from sugary beverages such as soda and sports drinks and from desserts such as cookies, cakes and doughnuts.

•Less than two cups of vegetables and fruit a day, far below the recommended four or more cups, a recent study showed.

Most people don't know how many calories they should consume in a day to maintain their weight, a recent survey showed.

The ideal number depends on height, weight, gender, age, activity level and other factors. Estimates range from 1,600 to 2,400 calories a day for women, and 2,000 to 3,000 for men.

"The guidelines are achievable goals," says Elizabeth Ward, a registered dietitian in Boston who is writing a book on them for the American Dietetic Association.

"You can meet most of these recommendations if you simply eat foods in their most natural form whenever you can," she says. "That way you'll avoid excess sodium, fat and added sugar, and you'll increase your chances of eating enough calcium, vitamin D, potassium and fiber."

Make smart substitutions each day

In practical terms, she says, that means eating an egg, whole-grain toast and fruit for breakfast instead of sugary cereal, toaster treats or a plain bagel with cream cheese.

It means having unsalted nuts or seeds instead of chips as a snack; raisins, dried apricots or dried figs instead of candy; fat-free milk or water instead of high-calorie soft drinks, Ward says.

Vilsack knows that the guidelines mean many people will need to make some significant changes in the way they eat — himself included.

He says after he read the new guidelines, he realized his own diet was "way off base" because he was eating too many added sugars and solid fats and not enough fruits and vegetables. He's now working on changing that.

When it comes to reversing the obesity epidemic, "there's no quick fix," he says. "It's all about calories in and calories out."

Superbowl FUN!

OK, so I'm not sure if I discussed this before but I despise football. I don't really like sports in general except baseball and from time to time basketball, but I really don't like football at all. But I have this boyfriend... this wonderful, sport-enthusiast boyfriend who absolutely loves football, and basketball, and baseball, and hockey, etc. So therefore, I'm interested in what he's interested in and likewise.... it's a relationship.

The Superbowl is one game of football that I actually enjoy though. Don't ask me why this game is any different, maybe the unity of the fans, the great halftime show, or the plethora of food and drinks at all the parties and celebrations?

In any case, now that I have an apartment and am in college feeling like a grown-up and all, I wanted to have a little shin dig this year. Probably not going to happen now, but in any case maybe my party ideas will be of some help to you at all your football celebrations.

Slice 'em up!

Toss in some olive oil with some salt and pepper.

Bake until nice and crispy.

It's basically like potato skins but more fun!

Add toppings of all/any sort!

Eat until you can't eat any more!

Baked Potato Nachos

serves 4-6

8 medium to large yukon gold potatoes

3 tablespoons olive oil

salt & pepper

Preheat oven to 450 degrees. Wash potatoes, peel off any bad parts, and slice into wedges (however thick or thin you would like). Toss with olive oil and sprinkle with salt and pepper. Lay on a non-stick baking sheet and bake for 45 minutes, flipping once. Remove potatoes and top with whatever toppings you would like. Stick back in the oven to melt cheese.

Toppings: black beans, refried beans, cheese, sour cream, greek yogurt, salsa, green chilis, avocado, enchilada sauce, jalepenos, chicken, shrimp, guacamole.

I've heard some people saying, "What's going on in Egypt?" and that worries me a little for my generation. We need to be aware of our world people. Some out there, and I find this a lot within my own generation, think that just because they don't see it, or hear it, or feel it that events like this don't affect them but they do. Movements like these can start a rolling turn against and fall of these regimes in the Middle East. Can you really sit back on your couch in your cozy, college apartment and say that's not going to affect you? Grow up, students! What happens in this world, happens to all of us... it affects all of us and things like this matter. It's time to stop saying, "Well, I just don't care about politics" or "My parents are republican, so I'll vote republican" or "It's not like it is affecting me". You are supposed to be in college, starting at freshman year you only have 4 years left until you need to step up into the "real world" and take care of yourself. You do need to care about politics because they will affect you directly and you do need to know who you are voting for because they will also affect you directly. You need to pick up a book, pick up a newspaper and read. Don't actively make yourself ignorant to the world around you. It's much more respectable when you take an active role in your life and show that you have a mind of your own to shape and form for yourself, not because of mommy and daddy but because of you!

Dumplings & Smith's

I went home this passed weekend to spend some belated birthday time with my beautiful niece. Although I don't have all the pictures to share with you right now, I do have a few.

To start, I get home and first things first... my dad makes me a pan full of dumplings and hands me a Fresca. Pure love right there.

Then, I spend the night with my friend and her lovely family, including her adorable and hilarious nephew (also the future boyfriend of my niece for sure). He's not doing much in the video but before this he was doing a nice dance impression of Elvis... in his later, heavier years. Quite the spectacle, I must say. Also, hysterical to watch... but then he saw the pizza.

The following day, my niece was dropped off to spend the entire day with me. Walking all around the house, playing with her toys, watching about 5 minutes of Despicable Me, reading Ni Hao Kai Lan!, and eating her nicely packed lunch from Mommy, as well as some other random foods that Grandma fed her... or painted on her face.

It was off to see the Great-grandparents/grandparents and Aunt for a short while after that, then bed for one of us and partying at Drexel U for the other... can you guess which one?

The next day was dim sum and special bonding at Smith's Play Place in the Park with the sis and niece. Any of your mothers, babysitters, aunts out there looking for something to do with children 5 and under... give Smith's a try. It was a blast and in the Spring when the outside monstrous playground is open it's only going to get better. Check out there virtual tour!

And that concludes my weekend... besides a 3 hour drive back to PSU and an early bed time that is.

I don't know if you saw it but there has been this thing on facebook, making album covers. These were a few of my friends and family, as well as the first one was mine. We got some quite interesting albums I must say. Quite a fan. (Just a fun little pass time...)

1- Go to wikipedia and hit random. The first random wikipedia article you get is the name of your band.

2- Go to quotationspage.com and hit random. The last four or five words of the very last quote of the page is the title of your first album.

3- Go to flickr and click on "explore the last seven days". The third picture no matter what it is, will be your album cover.

4- Use photoshop or picnik.com to put it all together.

Obama Visits!

I love going to Penn State... already had Joe Biden speaking this year and now President Obama.

Philadelphia Inquirer:

President Obama will visit Pennsylvania State University's main campus Wednesday to highlight its cutting-edge research in energy efficiency, White House officials announced Friday.

The trip to State College is part of Obama's political push to capitalize on his call for more research and innovation in clean-energy technology during Tuesday's State of the Union address.

Penn State has been awarded a $122 million grant by the Department of Energy to use on its "energy innovation hub" at the Navy Yard, where the university is leading research into energy-efficient building design and retrofitting.

"We're thrilled," said Henry C. Foley, Penn State's vice president for research and dean of the graduate school, who will lead the effort. "We're going into a new era of science and technology led by him, and we're very happy to be a lead institution helping to drive this all forward."

Obama will visit labs related to architectural and structural engineering, he said. Penn State spokeswoman Lisa Powers said the university had 150 researchers working on energy efficiency.

"We're really excited that we're being recognized by the president for our work in energy research," Powers said.

Obama said during his address that the United States should get 80 percent of its electricity from clean-energy sources by 2035, saying it needed to step up its game to be competitive in the world economy.

Energy Secretary Steven Chu said Friday that energy efficiency would be a big part of meeting that goal. "Countries all around the world are moving to innovate in energy efficiency," Chu said in a conference call. "This is a race."

The university is to begin receiving its Energy Department grant money, the largest single grant in Penn State's history, on Tuesday.

Over the next five years, the federal government will provide a total of $129 million for the research project at the Navy Yard, which will involve researchers from academia, the private sector, and two national laboratories who will study ways to save energy and cut carbon pollution.

U.S. Rep. Glenn Thompson (R., Pa.), who represents the State College area, welcomed Obama's emphasis on Penn State's work but said the president should also embrace the supply side of the energy equation.

Thompson said, "I am hopeful during his visit that Mr. Obama will touch on the importance of domestic energy production, especially oil, coal, and natural gas - each just as critical to any credible, long-term energy plan - and what steps the administration is taking to increase our domestic energy supply."

On Swirl.com today.... Part of the Massoni sale... Please tell me ponchos are not back. In my book, they never should have been "in". Ponchos very rarely are flattering. Even at the Golden Globes, Jennifer Lopez wore that sheer poncho with jewels and though I thought she looked gorgeous, I still think the poncho was unnecessary.

Three new Mediterranean restaurants just opened up all around my apartment and my roommate and I have gone to two in the past two weeks...

I have to say I'm not thrill about either so far, even though for some reason Restaurant 1 gave me my gyro for free? But anyway, the Lebanese place (restaurant 2) was definitely better and my roommate (the expert on baklava) said that it's definitely better at #2. Let hope restaurant 3 WOWs us...

Princess Fiona

Yes, I have a cat.. sorry HAD a cat... named Princess Fiona. She was a beautiful, little miracle kitten found by my older brother under our deck years ago. Her mom was a real bitch, feral and mean. She left Fiona when she fell into the window well under our deck and couldn't get out.

Anyway, the bottle/hand feeding of Fiona eventually led to an extremely lovable, needy to the point of annoying cat.

Today, Princess Fiona moves on to a new home with a very good family friend all because that same brother that saved her decided to leave my parents with him new cat (upping the cat quota of the household to 4) which eventually led to chaos and cat pee.

I wish Fiona and Martypants a wonderful life together, and am hereby submitting my warning that random visits with my Princess will occur.

This was my favorite book growing up. I can literally flip through each page and see each illustration in detail in my head. It's just a simple story about two friends having a visit together with their dolls. It was so simple and so beautiful. I called home to have my parents find it but I have this feeling that makes it seem pretty likely that it was given away. I need to get my hands on another copy of this book and if you have daughter or ever plan to have one then you must find this book. This book meant so much to me through my life... I'm sure it could be a nice collection for you/your child as well.

I got a little bit bored tonight... an was victim to horrible procrastination so I decided to go through the Nixon website. I shouldn't have been as surprised as I was to find other things besides watches that I liked. Nixon is a great company...great products... mostly targeted and bought up by the likes of surfers, skateboarders, snowboarders, entertainers... cool people. Their watch collection is versatile and fun. There are so many different styles, I'm not quite sure it's possible to not find a watch you'll like. These were my favorites... mostly the first item (the backpack below) and the last item ('The Chalet' watch). Take a look!
